Creamy Hashbrown Bake

Looking for a simple side dish to take to a bbq or feed the family? This recipe is straight forward and can be prepared ahead of time and baked later. Personally, we find that hashbrown bake goes great with hamburgers.

Prep Time: 10 minutes
Cooking Time: 35 minutes

Ingredients // Yield 6+

  • 1kg Hashbrowns thawed
  • 1 Small onion
  • 3/4 Cup milk
  • 1 Cup of grated cheese
  • 1 Can Campbells cream of chicken soup 420g
  • Pepper to taste

Procedure: (with images)

  1. Preheat oven to 190 degrees. In a fan-forced oven, I find the top shelf works best for this dish.
  2. Spray your baking dish with spray oil or grease it with butter.
  3. Dice onion.
  4. In a large mixing bowl, combine soup, milk, pepper and onion and mix until smooth.

Condensed soup and milk mixture

  1. Break up thawed hashbrowns into baking dish, being careful not to completely crumble them. I like to break mine into thirds and layer in my baking dish.

  1. Pour mixture over hashbrowns, making sure it covers all hashbrowns. I like to pick up the baking dish and tilt it from side to side to ensure the mixture seeps through to the bottom layers.
  2. Sprinkle cheese over the top.

  1. Bake in the oven for 30-35 minutes or until cheese is golden brown.

Leftovers
Chill!: Keep any leftovers stored in tupperware or covered with cling-wrap in the fridge for up to a week.
Heat!: Warm portions individually in the microwave for 2-3 minutes depending on portion size.
Freeze!: Because of all the dairy in this recipe, I don’t recommend freezing.
