Corn and Asparagus

Merry Christmas everyone!
I do apologise for my absence over the past couple of weeks – Christmas spirit just got the better of me and I didn’t have time to post. I have been missing you all so much though and I have been working on some great recipes I’ll share over the next few weeks.

Today’s post is a simple side dish that goes well with roast dinners, BBQs or even as a light lunch on it’s own. While the dish does sound a bit different to those that have never heard of it, I grew up eating corn and asparagus and I know it’s something tasty. 🙂

Corn and Asparagus
Prep Time: 5 minutes
Cooking Time: 20 minutes

Ingredients // Yield 6

  • 3 Tbsp butter
  • 2 Tbsp flour
  • 420g (1 Can) corn kernels
  • 425g (1 Can) asparagus
  • 3/4 Cup milk
  • 1 Cup grated cheese
  • Salt and pepper to taste

Slow-cooked Meatballs with Spaghetti

This is one of G Judy’s signature dishes. My attempt doesn’t even come close, but I am thankful she was willing to share her recipe with me. These meatballs are fantastic, make great leftovers and go perfect with angel hair pasta.

Prep Time: 30 minutes
Cooking Time: 6 hours on low heat

Ingredients // Yield 6+

  • 1 kg lean beef mince (or 1/2 kg veal & 1/2 pork mince)
  • 500g Angel Hair pasta
  • 1/4 Tsp sage
  • 1/4 Tsp parsley
  • 1/4 Tsp rosemary
  • 1/4 Tsp thyme
  • 1 Small onion
  • 1 Tsp garlic
  • 1 Cup breadcrumbs
  • 1 egg
  • 1 Tsp milk
  • 1 kg jar of your favourite pasta sauce
  • Salt & Pepper to taste
  • A sprinkling of garlic powder

Mashed Potatoes

Mashed potatoes is a tasty side dish that works great with any meal, but especially with our wonderful CHICKEN PIE.

Mashed Potatoes are delicious. I know you can buy it in a packet mix or frozen portions, but nothing beats fresh, creamy mashed potatoes. Everyone has their own way as to make it, this is just how I do it. I like to buy the type of potatoes from the supermarket that don’t require peeling as the skin has a lot of nutrients in it.

Prep Time: 5 minutes
Cooking Time: 30 minutes


  • You’ll need 1- 1 ½ potatoes per person
  • Chives
  • Salt (iodised)
  • Pepper
  • ÂĽ Cup milk (the more potatoes used the more milk required)
  • 1 Tbsp Butter
